Savory Sweet Chicken Triangles

½ cup California Dates, chopped

½ Onion, finely chopped

1 tablespoon Margarine

2 teaspoons Fresh Ginger, minced

1 teaspoon Ground Cinnamon

¾ teaspoon Ground Cumin
-
½ teaspoon Salt

teaspoon Pepper

½ cup Apricot Nectar

1 cup Chicken, cooked and shredded

cup Walnuts, chopped

2 tablespoons Cilantro, chopped
-
1 package Pie Crust, two 9 inch crusts
-
1 tablespoon Powdered Sugar
Preheat oven to 400 degrees. In a large skillet, cook onion in butter until soft. Stir in ginger, ¾ teaspoon cinnamon, cumin, salt and pepper. Stir in apricot nectar; cook over medium-high heat for 3 minutes or until thick and syrupy. Stir in chicken, walnuts, cilantro and dates; cool slightly.
Cut each pie crust into six triangle slices. Spread about ¼ cup chicken mixture over each triangle of dough. Top with another triangle slice, tightly sealing edges with a fork; repeat
to make six filled triangles. Make several small slits in top of triangles. Place on baking sheet; bake about 15 minutes or until crust is lightly browned. Combine remaining ¼ teaspoon cinnamon and powdered sugar; sift over hot triangles.
Makes 3 servings.

Cold Date Drink - Egypt
- 4 C dry dates (chopped)
- 5 C water

1 C sugar
Put the dates into the water over night. The next day, put
the mix into a blender and blend well. Add sugar and blend well. Put it in the
refrigerator to keep it cold. Add ice to it and serve it in a glass.

- 1 C fresh dates
- 1 TS of cinnamon
- ½ TS of cardamom seed
- ½ C of fresh ground walnuts
- small amount of warm honey

Mix the dates with some water to paste.
Mix in cinnamon and cardamom seeds.
Knead in the walnuts.
Form balls, spread with honey and cover in the ground
almonds. This recipe serves 2 and was
from 1600BC and was found on an ostraca (a pot fragment).
Tamar Mahshi (Stuffed Dates)

2 lbs. whole dates, pitted
-
1/2 lb. blanched whole almonds
Ahead of time, toast almonds lightly by heating them in a single layer on a baking sheet in a 350° oven for 10-12 minutes, until fragrant and slightly oily. Cool. Insert one almond into each date.
For a slightly sweeter treat, you may stuff the dates with prepared almond paste, or make your own by grinding the toasted almonds in a food processor or blender.
Transfer to a bowl and mix with 1 cup confectioners sugar and 1 tablespoons water until mixture begins to stick together. Form into small slender cylinders and insert into the dates. Serve at room temperature.
Tumr Bel Nargine (Coconut Dates) - Saudi Arabia
- 1 ½ lb soft dates (for mixing, pitted)
- ½ TS cardamom
- 2 C grated coconut
- 6 TB of butter
- ¾ lb almonds (peeled and blanched)
- ½ C water
Fry the almonds in oil until golden brown, place on paper towels to drain. In a
pan, melt the butter, add pitted dates and stir well over low heat; dates should
not stick to the sides of the pan. Remove from stove top. Add the cardamom and
leave out to cool. Take a small piece of date dough, place an almond in the
center and roll into a finger shape. Repeat using all the date dough. Roll each
date finger in the coconut and arrange on a serving dish.
California Dates ‘n Stuffed Apples

2 tablespoons Granola
2 tablespoons Walnuts, chopped
2 tablespoons Brown Sugar
5 tablespoons Orange Juice
4 teaspoons Margarine, melted
¼ cup Water
2 teaspoons Lemon Juice
1 teaspoon Orange Peel, grated

4 large Apples (Rome, Beauty, Delicious or Macintosh)
Maple syrup, optional
In a small bowl combine dates, granola, walnuts, sugar, 1 tablespoon of orange juice,margarine, lemon juice, orange peel and cinnamon; set aside. Core apples; set in 9 inchround baking dish. Fill cavities with date mixture, dividing equally.Combine remaining ¼ cup orange juice with the water; pour around apples in dish. Coverwith foil; bake in 350 degree oven 30 minutes. Remove foil; continue baking about 15minutes longer, or until apples are tender when pierced with a fork. Serve warm or cold, drizzled with maple syrup. Makes 4 servings.

Date-Filled Cookies - Oman

3 C flour

1 TS baking powder
-
½ TS salt
-
¾ C butter or margarine (at room temperature)
-
1 ½ C sugar
-
2 eggs
-
1 TS vanilla extract
filling:
8 oz pitted dates (chopped)
½ C sugar ¼ C lemon
juice ½ C chopped walnuts
Sift the flour with the baking powder and salt. Set aside. In a large bowl mix the butter, sugar, eggs and vanilla until light and fluffy. Gradually stir in the flour mixture until it is all well combined. Form the dough into a ball, wrap in plastic wrap or aluminum foil, and refrigerate several hours or overnight.
Divide dough into four parts and refrigerate until ready to use. Meanwhile, make the Filling: In a small saucepan combine the dates and sugar with ½ C of water. Cook, stirring, over medium heat until the mixture has thickened - about 5 minutes. Remove from heat. Stir in the lemon juice and walnuts. Cool completely. On a lightly floured surface, roll dough, one part at a time, ⅛” thick. With a floured 2 ½” cookie cutter (or the bottom of a glass), cut out cookies. Re-roll trimmings and cut. Using a spatula, place half of the cookies on a lightly greased cookie sheet, about 2” apart. Spread 1 teaspoon of filling over each cookie. Cover with another cookie. With a floured fork, seal the edges firmly. Also, prick the center of the cookie once with the fork. Bake in a 375° oven for 10 - 12 minutes or until lightly browned. Remove to a wire rack and cool. *VARIATION: use date paste mixed with chopped walnuts in place of the filling.
Date Filled Oatmeal Cookies

1 TS vinegar -
½ C milk -
1 C flour (stirred before measuring) -
1 TS baking soda -
¼ TS salt -
¾ C granulated sugar -
¾ C soft shortening -
¼ C butter -
5 C uncooked quick-cooking rolled oats
filling : 1 C chopped dates 1 C granulated sugar
1 TS lemon juice ¼ C water
Stir vinegar into milk; set aside. Sift flour with baking soda and salt.
Cream shortening and butter until light
and fluffy, gradually adding the ¾ C sugar. Blend in half of flour mixture, then
blend in soured milk, then blend in remaining flour mixture. Stir in rolled
oats. Refrigerate cookie dough for at least 4 hours. Meanwhile, make the date
filling. In a saucepan combine dates, ⅔ C sugar, lemon juice, and water. Bring
date mixture to a boil and simmer for a minute. Remove from heat and let cool.
Preheat oven to 350°. Roll about one-third of the chilled dough out to about ⅛”
thick on a generously floured surface. Keep remaining dough refrigerated until
ready to roll out. Cut rolled out dough with floured 2” round cookie cutter.
Place on ungreased cookie sheets and bake 10 - 12 minutes; cool. To serve,
spread 1 TS of date filling on half of cookies; top with remaining cookies.
Date-Nut Cookies - Oman

1 C sugar

¾ C butter (at room temperature)

2 TB of (prepared) milk
-
1 TS vanilla
-
2 beaten eggs
-
2 ¼ C flour
-
1 TS of baking soda
-
1 TS of baking powder
-
1 C chopped nuts
-
1 C dates (chopped, pitted)
In a large mixing bowl, beat the butter and sugar together until well mixed. Add the milk, vanilla and eggs. In a separate bowl, sift the flour with the baking soda and baking powder. Gradually add the flour mixture to the sugar-egg mixture. Lastly, stir in the chopped dates and nuts. Drop rounded teaspoons full of dough about 2” apart unto an ungreased baking sheet. Bake in a 375° oven or until the cookies' edges are lightly browned. Cool the cookies on a wire rack.
Oatmeal Date Bars

1 C flour

1 C raw oatmeal

C packed brown sugar (or ½ C regular sugar + ¼ C of date syrup)
¼ TS baking soda
¼ TS baking powder
½ C butter or margarine (softened)
juice of a lemon
1 C packed, chopped, pitted dates
½ C water
(or 1 C of date paste and 3 TB of butter)
C of chopped
nuts (optional)

Orange Date Cake - Oman

¼ C margarine or butter (room temperature or melted)
-
1 C flour
-
2 TB baking powder
-
1 egg
-
½ C brown sugar (or white sugar)
-
1 TS orange peel (finely shredded)
-
½ C orange juice
-
½ C walnuts (or other nuts chopped)
-
½ C dates (chopped pitted)
-
powdered sugar (optional)
In a mixing bowl beat the margarine with the sugar. Add about half of the flour, the orange peel, half of the orange juice, the egg and the baking powder. Beat until thoroughly combined. Beat in the remaining flour and orange juice. Then, stir in the nuts and dates. Pour batter in a lightly greased and floured 9” x 13” cake pan. Bake in a 350° oven for about 25 minutes or until a toothpick inserted near the center comes out clean. Cool the cake. Sift powdered sugar over the top, if desired. Then, cut and serve.
Australian Sticky Date Pudding Cake

butter (room temperature cut into 8 pieces) + extra to butter pan

1 ¼ C pitted dates (chopped)
-
1 TS baking soda
-
¼ C sugar
-
2 eggs
-
1 ¼ C flour
-
½ TS salt
-
½ TS vanilla
-
1 ¾ TS baking powder
¼ C whipping cream
½ TS vanilla
½ C firm packed brown sugar + 1 TB firm packed brown sugar
Cake:
Preheat oven to 350°. Butter a 9” round baking pan with sides at least 2”
high. Place the dates in a saucepan and cover with water (about 1 ½ C).
Bring to a boil, reduce to simmer and cook for 3 minutes. Add the baking
soda (the mixture will foam) and set aside. In a bowl, cream the cut up
butter, sugar and eggs, adding the eggs one at a time. Gently mix in the
flour, salt and vanilla. Slowly stir in the baking powder and ¼ C of the
liquid from cooking the dates, until the cake mixture resembles thick
pancake batter. Drain off remainder of date cooking liquid and discard. Stir
in the dates. Bake for 30 - 40 minutes, or until cooked in the center.
Caramel Sauce:
Combine the butter, whipping cream, brown sugar and vanilla. Bring to a
boil; reduce to simmer, and cook for 3 minutes.
Serve: Drizzle some of
the sauce over the cake as it is cooling. Serve the rest of the sauce
separately
Decadent Chocolate Date Torte

1 12 oz package Semi-sweet Chocolate Chips
-
½ cup Butter or Margarine
-
2 tablespoons Sugar
-
4 Eggs
-
1 cup California Dates, chopped
-
2 tablespoons Flour
-
1 tablespoon Vanilla
-
Chocolate Glaze (recipe follows)
-
Whipped Cream
-
California Dates, whole & pitted
-
Chocolate curls
Stir chocolate chips and butter in top of double boiler over simmering water just until melted. Meanwhile, beat eggs
and sugar on high speed with electric mixer until very light and pale, about 5 minutes. Gently fold chopped dates,
flour, vanilla and chocolate mixture into the eggs. Pour into greased and floured 9-inch round baking pan. Bake at 425
degrees for 15 minutes, or until edges are set but center is still soft.
Cool in pan. Loosen edges and transfer to serving plate.
Pour Chocolate Glaze over torte; spread to cover top.
Pipe whipped cream with a pastry bag or spoon whipped
cream decoratively around sides and top edges of torte.
Nest whole dates in whipped cream around top edges.
Sprinkle with chocolate curls. Cut into thin slices to serve.
Makes 12 servings.
Chocolate Glaze
3 oz Chocolate, semi-sweet
2 tablespoons Butter or Margarine
Melt ingredients in top of double boiler over simmering
water. Stir to blend. Keep warm.

Chicken with Lentils, Dates and Rice-
4 Chicken Breasts, boneless, skinless and halved (approx. 1 ¼ lbs)

2 tablespoons Vegetable Oil

1 Onion, medium and chopped
-
2 cups Chicken Broth
-
1 cup Lentils, dried
-
½ cup California Dates, chopped
-
½ cup Long grain White Rice
-
½ cup Red Peppers, diced
-
½ cup Carrots, diced
-
2 cloves Garlic, minced
-
½ teaspoon Lemon Peel, grated
-
½ teaspoon Ground Cumin
-
½ teaspoon Curry Powder
-
1 tablespoon Parsley, chopped
Brown chicken breasts in 1 tablespoon oil in a large, heavy saucepan over medium heat.
Remove chicken and set aside. Add remaining 1 tablespoon oil to pan; stir in onions. Cook, stirring frequently, until onions are golden brown, about 15 minutes. Stir in remaining ingredients, except parsley and chicken breasts. Bring to boil; cover and simmer 15 minutes. Arrange
chicken breasts on top of lentil mixture; cover and simmer another 8 – 10 minutes, until chicken breasts are cooked through and lentils are tender. Sprinkle with parsley and serve.
Makes 4 servings.
